About the lecture:
Have you ever wondered where the microbes we use to make our favorite brews come from? Or why sourdough bread is so much more delicious than a regular loaf? These questions and more will be answered as we explore the origins and superpowers of the fermentation microbes we befriended over the past 10,000 years or so. This lecture will include a microbial "show and smell" that will convince you when it comes to fermentation, weird friends are wonderful.
Dr. Chris Curtin is an Associate Professor of Fermentation Microbiology at Oregon State University, where his lab explores the role of microbes across a range of fermented foods and beverages and their potential applications towards sustainable food production. At home he likes to befriend all sorts of weird microbes to make gochujang, kefir, kombucha, sauerkraut, sourdough and tepache.
